The aplication of functional genomics for food microbiology

The methods functional genomics (it includes genomics, transcriptomics, proteomics and metabolomics) are expected to be crucial in food microbiology, especially in guiding predictive modelling of behaviour of spoilage and pathogenic micororganisms. The analyses can provide a molecular fingerprint that enables easy detection of pathogen (genomics) and recognition of their fysiological state, as well (transcriptomics, proteomics and metabolomics).Consequently, we might be able to predict which preservation treatment will be optimal.
Transcriptomics approach was applied for a case study of
Bacillus subtilis which forms thermoresistant endospores.
This study released different transcript profile for
srain cultivated just in laboratory and strain isolated directly from food. This data might be used for food processing to prevent food from Bacillus presence in food.
